California Grilled Veggie Sandwich

Brush vegetables with olive oil on each side. Brush grate of grill with oil. Place bell peppers and zucchini closest to middle of grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill and set aside. Spread some of the mayonnaise mixture on cut sides of bread; sprinkle each with feta cheese. Place on the grill, cheese side up, and cover with lid for 2 to 3 minutes. Watch carefully so the bottoms don’t burn. Remove bread from grill and layer with vegetables.

Mix strawberries with 3 tablespoons sugar and refrigerate while juices develop, at least 30 minutes. Preheat the oven to 400 degrees F. Sift together the flour, baking powder, baking soda, remaining 2 tablespoons sugar, and salt in a medium bowl. Add heavy cream and mix until just combined. Place mixture in an ungreased 8-inch square pan and bake until golden, 18 to 20 minutes. Remove shortcake from pan and place on a rack to cool slightly. Cut into 6 pieces and split each piece in half horizontally. Spoon some of the strawberries with their juice onto each shortcake bottom. Top with a generous dollop of whipped cream and then the shortcake top. Spoon more strawberries over the top and serve.

For glaze: Combine and heat to boiling, sugar and orange juice; stir in orange rind. Cool. When cake is cool, remove from pan, put on plate. Drizzle glaze over cake. Garnish with orange slices.
